This course is an introduction to the art and science of fermentation & preservation. We will explore the fascinating and wild world of funky smells, bubbling sourdoughs, frothy fuzz, moldy cheese and more. You will learn how to preserve citrus, make creme fraiche, sourdough starter, and sauerkraut. We will enjoy a tasting of a variety of fermented foods from pickles to kimchi to tofu. History of fermentation will be discussed. Don’t worry it’ll be fun!
